SUMMER RECIPE
Berry and Mint Iced Tea
“This is one of my go-to recipes that is in my fridge ALL summer and is the best refresher after a day out in the sun! I also make it for Christmas Lunch every year with my family – even good for people that aren’t big tea drinkers!”

WHAT YOU’LL NEED:
- 2 x Berry flavoured tea bags
- 1/2 lemon
- Mint leaves
- Iced if desired
METHOD:
-
With 2 tea bags, boil a pot of tea.
-
Any berry flavour tea works well in this recipe. Raspberry is a personal favourite, but any mixed berry tea will work great too!
-
-
Wait for the tea to cool down to room temperature.
-
In a large serving jug, mix half-and-half cooled tea and water.
-
Cool for a few hours in the fridge or cool overnight.
-
When serving, add some: mint, a touch fresh lemon juice and some frozen berries
-
The frozen berries are the best part as they slowly bleed into the tea for a really impressive effect!
