“MINI LEMON RAW-TREAT BALLS“
Ivy Evenden (newly crowned Raw Food Queen) has been a busy-cooking-bee this month and sharing her delightful treats with lucky yogis fresh out of their August workshops! For those looking for a yummy treat – try this treat out!
THROW THE FOLLOWING INTO YOUR FOOD PROCESSOR:
1/2 CUP SUNFLOWER SEEDS
1/2 CUP PUMPKIN SEEDS
1 CUP SHREADED COCONUT
3 TBSP COLD-PRESSED COCONUT OIL
8 DRIED FIGS
JUICE OF 1 LEMON A PINCH OF SALT
Process until the mixture “crumbles”
and is slightly sticky. If too dry, add more coconut oil. If too wet, add more shredded coconut. Using your hands to mold the mixture into bite-sized balls and place in a container. Pop in the fridge to set for 2 hours. Refrigerate for up to 7 days. Enjoy!
